Banana Chocolate Chip Pancakes



Today one of my kids woke up sick. He didn't have much of an appetite, but he needed to eat so I asked him what he would like and he asked for Banana Chocolate Chip Pancakes. I really didn't feel like making them but how could I say no? In our house it is not unusual to have banana pancakes but, we have never had them with chocolate chips in them. I must say they turned out DELICIOUS! You don't even need syrup on them, but hey, why not. It just adds to the yummy goodness!
I managed to get a few pictures taken. However, I didn't get any pictures of the pancakes after they were cooked. The kids were gobbling them up as fast as I could make them.

I am big fan of making things "Semi Homemade", so for these pancakes I used a mix. However if you are a "From Scratch" only person I do know a great pancake recipe that I will share with you.
To make these pancakes make your batter as usual. Mash up 1-2 bananas and add it to your batter. Pour batter onto an oiled pan and sprinkle a few chocolate chips on top. Flip and you are done. See...super easy and super yummy!!!!!


Fluffy Pancakes (from allrecipes.com)

Ingredients
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
Cooking spray
Directions
1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
